Ingredients

\n \n\n \n8 oz Ground Beef Chuck \n \n8 oz Ground Sirloin \n \n 1⁄2 tsp Kosher Salt \n \n 1⁄4 tsp Oregano \n \n 1⁄4 tsp Marjoram \n \n 1⁄4 tsp chopped garlic (from a jar is fine, fresh is even better) \n \n 3 or 4 good grinds of Black Pepper \n \n Feta cheese \n \n

Instructions

\n \n\n \nMeasure out your beefs in a bowl. if you have a scale with a tare function, use it. If you don’t, eyeball it. 50% sirloin, 50% chuck. \n \n Add the salt, pepper, oregano, marjoram and garlic. \n \n Mix thoroughly. Use your hands and let out some aggression or something. Just make sure you wash them first and after. \n \n Once the meat is well mixed, form it into a ball in your bowl and separate it into roughly equal quarters. Each should weigh a little more than 4 ounces. \n \nTake one quarter of the meat and roll it into a ball. \n \nFlatten out your meat wad into a disc about 3 inches across. \n \nplace a pile of feta cheese in the center of your beef disc. Make it as big as you want, just make sure it’ll all fit. \n \nonce you have your feta pile, take two opposing sides of the meat frisbee and fold them up to meet each other. \n \nCarefully shape it into a patty, making sure that the cheese is well sealed in \n \nRepeat steps 5 through 9 until you have four lovely little hamburger patties. \n \nHeat a lightly oiled pan over medium-high heat for 2 or 3 minutes. \n \nPut your wonder-discs into your pan and cook them, 4 minutes a side for medium rare or 5 minutes per side for medium.
